Strawberry Cream Cheese Loaf

I have a confession. I am an addict. I have a tendency to get addicted to foods, then eat them every day for weeks. Sometimes this isn't a problem, like ham and cheddar omelettes, or guacamole... Not exactly balanced, but at least it's real food! On the other hand, it's often not so healthy, like blue raspberry saltwater taffy or orange dream ice cream. Currently, it's just about as bad as it can be. Spicy Cheetos. Oh, they are so vile, and so addicting. My brother named them "Crack Cheetos", and he's not far off the mark. There's something dangerous in there. I thought I was done with them, but a moment of weakness... actually, grocery shopping at 3:00 in the afternoon while having eaten nothing all day... brought them back. I must break the habit! Gah!


Strawberry Cream Cheese Loaf (from The Baker Upstairs)

1/2 cup butter, room temperature
1 cup sugar
4 oz cream cheese, room temperature
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup buttermilk
1 1/2 cups strawberries, rinsed, dried and chopped

Preheat your oven to 350 degrees. Grease and/or line a standard loaf pan and set aside.

Cream together the butter, sugar and cream cheese until fluffy. Add eggs one at a time, followed by vanilla, mixing well after each. In a separate bowl, whisk flour, baking powder, baking soda and salt together. Add dry ingredients to butter mixture and mix till just combined. Add buttermilk and stir until just incorporated, being careful not to overmix! Carefully fold in the strawberries.

Pour into loaf pan and smooth the top. Bake for 50 to 60 minutes, until golden brown and a toothpick inserted comes out clean. Let cool in the pan for a few minutes, then remove to cool on a wire rack.
This dead easy, simple sweet cake is perfect for snacking. Scrumptious, creamy, soft and fruity, just plain delicious! It's also a great way to use out-of-season strawberries, which usually have very little flavor, but turn sweet and jammy in this cake.
Breakfast, after-school snack, delivery for friend or neighbor, it's a cinch to whip up and yummy as can be!
