Roasted Cauliflower with Lime & Spices

Jeez louise, it is COLD! It's been a long time since I've seen single digit temperatures! Feels fantastic. Winter should feel like winter, don't you think?? The snow is falling thick and soft, slowly building... Not sure if we'll get all the way up to 15 inches, but it's definitely a Winter Wonderland! I'll take pictures tomorrow. :)



Roasted Cauliflower with Lime & Spices (adapted from REMcooks)

1 large head Cauliflower
3 cloves garlic, minced
1 Tb chile powder
1/2 tsp paprika
1/4 tsp cayenne pepper
1 tsp ground cumin
4 Tb Olive Oil
1/2 tsp kosher salt (or 1/4 tsp table salt)

1/4 cup fresh cilantro, chopped
juice of 1/2 lime

Preheat oven to 350 F. Cut cauliflower into florets. Combine spices in a small bowl. Place cauliflower in a large bowl, drizzle with the olive oil, sprinkle with spices, garlic, and salt. Toss to coat well.

Spread the seasoned Cauliflower in a shallow roasting pan, in a single layer. Roast 1 to 1-1/2 hours or until tender, stirring occasionally. Remove from the oven and sprinkle with lime and cilantro. Serve!
Fiesty spices and garlic on tender roasted cauliflower with a splash of bright, tart lime (and cilantro, if you like the stuff), definitely a step up from steamed with cheese sauce! Definitely a fun and tasty new way to get your veggies!
Trying this one was all the Geologist's idea. I'm so proud of him. I converted him to brussels sprouts and now he's actually excited about trying vegetables he hates! Yes, cauliflower was one of them. But yet again, he's sold! To be honest, I would have cut back on all the spices just a hair, I thought it was a bit too strong, but he loved it. So I leave the tweaking to you!

  1. Oh boy, do we love cauliflower in this house! One of our favourites. Todd isn't fond of broccoli, but he does like cauliflower. I am not sure why the difference. This looks like a fab way to cook it. Pinning! xxoo
