Cinnamon Puff Cookies

We found our house!! I can't believe it happened so quickly! We looked at 6 houses in one day. The first was gorgeous on the inside, but the yard was horrible and we weren't thrilled about the street. The next four were definite no's. The last one I had been on the fence about from looking at the pictures, but we went to see it anyway... And looking past the furniture, and the lavender walls, and the hideous cabinets... it gave me butterflies!! We've looked at a few more but I am saying it: THIS is our house! The backyard... oh heavens. It's glorious. And guess what?? TWO lilac bushes!! It's a sign. Oh, I can't wait to show pictures. There is some cosmetic work to do, but that's fun stuff. Making it our own. There are two rooms in the basement that need finishing, but hey, The Geologist always need projects! We're putting in an offer this week!! Fingers crossed!!




Cinnamon Puff Cookies (from The English Kitchen)
Printable Recipe

1 box of puff pastry (2 sheets) , thawed (till workable, not till warm!)
softened butter
1/2 cup packed light brown sugar
2 tsp ground cinnamon
1/2 tsp nutmeg
1 egg yolk beaten with a little bit of water (1/2-1 tsp)

To glaze:
1 cup powdered sugar
few drops vanilla
1-2 Tb milk or cream

Preheat the oven to 400 degrees. Line a cookie sheet with parchment paper. (If you just grease it, your cookie sheet will be a mess!!)

Unroll your puff pastry. Brush with softened butter. 
Mix together the cinnamon, nutmeg, and brown sugar. Sprinkle this evenly over top, leaving about 1/2 inch bare on one long edge. 
Roll up from the not-bare edge, pressing all together tightly. Using a sharp knife cut into 12 slices.
Carefully slide them onto the prepared baking tray. Flatten each one slightly with your hand by pressing down gently. (Forgot to do that!) Brush each with some of the beaten egg. (Repeat with the other sheet of pastry)

Bake for 10 to 15 minutes until puffed and golden brown. Remove from the oven and immediately transfer to cooling rack. Let cool completely before drizzling.

Whisk together the powdered sugar, vanilla and milk. You want a thick drizzly glaze. Drizzle over top of the puffs. Enjoy!
How simple and easy is that?? If you, like me, are a little nervous about working with puff pastry, no worries. Roll them together, then put the roll back in the fridge for 30 minutes. Keeping all that butter in the pastry cold is what will give you fluffy, puffy, crispy cookies. Then just slice and bake!
You could add chopped nuts or dried fruit to the filling... you could roll them from the short end and make fewer, bigger cookies (I love these little 3 bite ones!)...
Throw them together before a party! They'd make fabulous finger snacks! Look at all those buttery, puffy pastry layers! They're like crispy little cinnamon rolls in cookie form. How is that not scrumptious??
I do believe this is the easiest cookie recipe I have ever made. And everybody loved them. We were fighting over them!

  4. Happy Day! Finding the right house can be so hard, and you found it on the first try?! WOW! I hope you get it, if it's meant to be yours! Looking forward to pictures... Having a house of your very own is so LIBERATING! A yard, a fence so kids can play outside without having to have constant supervision, a window at the sink so you can see the backyard, being able to paint however you want, all the space (inside and out)... Not to mention knowing you're where you're going to stay for several years and making friends with the neighbors you'll be keeping for a good long time. It's amazing! Enjoy making it yours!
