Pumpkin Chocolate Chip Cream Cheese Bread

Happy November!! One of these days I'll stick to that schedule I keep making myself. Until then, I'll just keep my fingers crossed that as long as I can keep giving you scrumptious food, you won't up and rebel on me. Totally kidding, you're the sweetest, most patient group of friends and readers that a scatter-brained girl could ask for! Which is why even though 'tis late, I had to get you this recipe, come hell or high water or a week-long hiatus. October may be over, but who said that means we have to put our pumpkin away till next year? If you've got a spare can, and some cream cheese lying around, with that winter storm front looming, you'll be set for scrumptious goodies to hold you through the big chill with this recipe. Is it just me, or does this whole Alaskan storm remind anyone else of the intro to the classic Rudolph the Red-Nosed Reindeer movie??

If it were December instead of  early November, I would be pretty concerned about Christmas, I don't know about you... Instead, I'll just be concerned for Alaskans, pray like crazy, and hunker down planning my baking list!! For those of you not in the US, congratulations. :) For those of you getting frozen already, bundle up and stay warm!! I'll see you tomorrow, when we start getting snowed on. Homemade Crumpets

 So, what on earth is a crumpet? Anyone? Well, I know I have at least a handful of British readers out there, and you guys and gals are all over it. But for the rest of us, they just plain don't exist in the States. I have no idea about the rest of the world. but I would still be willing to bet they aren't exactly common. When I was a kid, there was a movie called "The Great Mouse Detective", an animated mouse version of Sherlock Holmes, and the Mrs. Hudson mouse made cheese crumpets. It was apparently made by an American who has never seen a crumpet, because they looked like muffins. So of course, my 9 year old self thought that's what they were. False advertising, I tell you!! The best way to describe crumpets is a cross between an English muffin and a pancake. And they're awesome, and my boys can devour a dozen in the blink of an eye. I'm going to have to start making triple batches and freezing them. Luckily, they're also an absolute cinch to make!

Super Cinnamon Ribbon Coffee Cake

I... have nothing interesting to talk about. My peony bushes are huge. I heard the closest lightning strike I've ever heard today, at the beginning of a 15 minute rainshower. Colorado is so weird and awesome that way. We're planting seeds in our little garden plot on Friday! I'm excited!! But boy, trying to decide which varieties of tomatoes to plant was dizzying! Do you have any favorite varieties? Specifically varieties that can well? (Why do we call it canning when we usually put things in jars?) I'm kinda winging it, I got Better Boy for canning and some kind of "Beefy" thing for eating. We shall see. I still need as much sleep as a toddler, which is odd. I wonder when that particular symptom will wear off... I love my house more every day, though I'm lousy at cleaning it. Our carpet got scheduled!! It will be installed next Wednesday! We're also having our big window replaced and installing French doors, which we ordered forever ago and I just found out the doors were broken on arrival so they had to reorder them. Oh well! This cake is delicious!

Blueberry Cheesecake Morning Buns

Do I have a story for you!! We had a lovely little weekend, ALL the way down in Colorado Springs. The hotel was great, the boys spend hours in the pool, the Geologist bought a ridiculously hot leather jacket (I still can't believe he let me talk him into it!), we saw The Lego Movie, and finished our trip with a visit to this neat little area of Downtown Colorado Springs, where my family used to visit a kite shop (I think) and I used to go to a candy store with my best friend. The candy store is closed, but the square is still full of fun little shops surrounding a park. We had some awesome burgers (cream cheese, bacon, perfectly gooey fried egg. Life-changing!!) and hung out at the park for a little while, before rounding up the boys and heading home. Idyllic.

On the drive home, right as we hit Denver, I realized I left my purse at the park!!! Now, that in itself is scary enough, but for those of you not familiar with the area, Colorado Springs is over an hour's drive away from Denver. I called the burger place and they were nice enough to run out and check for me... but my purse was gone. We drove around in circles while the Geologist called the police department and I frantically got all of my credit and debit cards blocked, then resigned ourselves to my purse's fate. But less than five minutes after we got off the phone, we got a call... from the police officer who found my purse!! And everything was still in it!! Of all the people who could have found it, a cop?? Seriously?? Call it luck, call it blessings, my prayers were certainly answered. So we drove back down to get it. And took the scenic route back, because we were completely sick of the highway at that point. Life is good!! Besides, I had just bought a new purse that day, and I really really like it. :)

Fool-Proof Homemade Brioche

Goodness gracious, where on earth has my week gone?! Ack! Sorry for letting the week slip by, and my delayed posting of this life-changing recipe; between my first workout in over a month (owwww!!!) baking six dozen muffins and looking for window replacement contractors, it's been a busy few days!

When I say life-changing, I mean it. I've tried four different Brioche recipes before this one, and none of them worked for me. They all tasted just fine, but after the initial rise in the pan, that was all she wrote. No rise in the oven. That is not Brioche, folks!! This version was my very last hope, and it really is fool-proof!! If you trust the recipe and don't freak out about how soft the dough is, you're good to go! In fact, for my second batch, I accidentally doubled it without checking my yeast... It needs a tablespoon, and after my first tablespoon there was barely a teaspoon left. So I tossed that in and crossed my fingers... and it rose just as much as the first batch! That's what I call fool-proof, when a recipe can handle a few hiccups!

Strawberry Cream Cheese Loaf

I have a confession. I am an addict. I have a tendency to get addicted to foods, then eat them every day for weeks. Sometimes this isn't a problem, like ham and cheddar omelettes, or guacamole... Not exactly balanced, but at least it's real food! On the other hand, it's often not so healthy, like blue raspberry saltwater taffy or orange dream ice cream. Currently, it's just about as bad as it can be. Spicy Cheetos. Oh, they are so vile, and so addicting. My brother named them "Crack Cheetos", and he's not far off the mark. There's something dangerous in there. I thought I was done with them, but a moment of weakness... actually, grocery shopping at 3:00 in the afternoon while having eaten nothing all day... brought them back. I must break the habit! Gah!

Spiced Pear & Buttermilk Cake

It snowed, it snowed!! It is officially the holidays, truly feels festive, and we put up our Christmas tree! And I, as you can probably tell, am jumping for joy. In fact, the snow has stuck around for two whole days! It'll melt later this week. Finally, a real Colorado winter! 

I have the most marvelous memories of Colorado snowstorms... School canceled for a week, Christmas music playing non-stop, hot chocolate and jigsaw puzzles, baking treats and playing games, movies and popcorn and laughs... It was always best if Dad got to stay home from work too! A few times we had real no-kidding blizzards, and you couldn't see past the windows. Makes staying inside even cozier! In Colorado, a White Christmas is always a possibility!

My Favorite Banana Nut Bread

Happy November!! And in our house, happy first day of the Christmas season! I may have mentioned before, we're a little nuts about Christmas in this house. The Christmas music and festivity and anticipation starts now. Thanksgiving is just wrapped up in the fun of "The Holidays". Now to find a radio station that is playing Christmas music already... We're on pins and needles around here, our sellers are negotiating on a house, and if it goes through, we'll be moving at the beginning of December! Christmas in the new house! Oh, did I forget to mention? WE BOUGHT A HOUSE ON WEDNESDAY!! We are officially home-owners! Too bad someone else still lives in our home... But it is truly worth the wait. 

What about you? How crazy (or not) do you get about Christmas in your house? Do you wait till December to get a tree, no Christmas-ness before Thanksgiving? Or are there other holiday nuts out there?

French Toast Muffins

I know, you didn't get a Chicken Rice Soup post, but honestly, the more I looked at the pictures the less I could stomach posting them. They're awful. So I'll just have to make it again, darn!! It's currently our favorite soup, so you shouldn't have to wait too long.

Anyone have a rake we can borrow?? We want to go to the park and rake leaves to jump in. Living in apartments forever does not lend itself to owning yard implements. And we really need to go somewhere other than here to rake leaves, seeing as how every square foot of ground here is some dog's bathroom... which is a shame, because we are developing some awesome piles. Oh well, this is our LAST FALL without our own yard!! We can suffer through! Our Halloween week has gone swimmingly, even with an overly expensive corn maze that only ended up being about waist high... at least we got hayrides and funnel cake out of it. The boys got such a haul at the trunk-or-treat last night that I can comfortably skip neighborhood trick-or-treating on Halloween. We'll have a spooky movie night or something. I promise to get pictures from my DC trip and our Halloween adventures up by the end of the week. Happy Halloween everyone!!

Better-Than-Olive-Garden Breadsticks

Oh heavens on earth, I can't wait to move. I know, I know, I say it all the time these days, I apologize! But seriously folks, I am losing my light over here!! All my pictures are turning blue! Sigh. They still look infinitely better than they used to. And I still love my camera. And we close on our house next week! So there is much to be thankful for!

Speaking of things to be thankful for, my Grandma passed away today. That sounds horrible, but it isn't. She's had dementia and medical issues and has been miserable for years. She hasn't known her sons (My dad) for a while now, and while we're sad she's gone, we're relieved that she is no longer hurting. She is with her other two sons, her husband, and lots of family now, and we will see her again! I am grateful for that. 

I've made these tasty little things twice in the past week, and am making them again tomorrow. They're that good

Lemon Banana Bread

Stephen came home from school yesterday with bandages wrapped around both hands. "What the?!" Obviously I was a little alarmed! Especially because his school tends to call me about every slightly concerning happening possible. So I asked him, "What happened? Are you okay??" He shrugs and says, "Monkey Bars."

Monkey Bars?! I unwrapped his hands when we got home, the bandages were getting pretty grimy. And let me tell you... He had blisters on his palms, popped and unpopped, bigger than any blister I've had in my whole life. They were awful!! And he was just annoyed that they hadn't let him go back on the monkey bars after wrapping them up! That's hard core for a seven-year-old! I was a bit dazed... then I asked him, "Do you remember when we watched the Olympics last year? Do you remember the gymnasts?" And his whole face LIT up. So today, I am finding this kid a gymnastics class. Because any seven-year-old that loves monkey bars enough to play through giant blisters deserves some dedication and investment! Heck, even if he only does it for a year or two, it could be SO good for him! I'm excited. Who knows, in 10 years we could be looking back at the day he knew he wanted to be a gymnast, watching him compete!

Irish Soda Bread

The oddest thing has been happening to me lately. For three days in a row I have woken up, no alarm, just after 6 AM... and gotten up! Usually I have to drag myself out of bed, clinging to every last second of sleep... But  feel fine! The sun isn't even up yet. Part of me wonders if I should start taking sleeping pills again... But I think I like it! I like this little bit of time before my house wakes up. Everyone except Bracken, of course. She's parked at my feet as usual.

In other news, still raining!! We called in to a helpline last night to offer our extra bedroom to anyone who has been displaced by the floods. I kind of hope someone calls... I'd love to help! Here's hoping things get under control soon in the areas around us that are still in danger, but I (and my big black beastie) will keep reveling in the rain. She takes after her mom! :)

Auntie Anne's Soft Pretzels (Copycat)

I have a love-hate relationship with clothes shopping. It is so much fun to find new clothes that fit and make you feel good, but dressing rooms. Just... dressing rooms. Ugh. The mirrors are rarely flattering, and I don't know about you, but I always seem to be all hot and sweaty and frazzled and edgy by the time I'm done trying everything on. And lets not even get started on crowds! Like I said, love-hate. Anyone with me? The only thing (besides the clothes) that makes braving the mall worth it, for me, is the soft pretzels. Love those things. So does Joe. Going to get one at the mall is our favorite mommy-son date. But then there are the times when the pretzels are cold, or half-cooked (yep, I got one like that last time) and you wonder: IS this really all it's cracked up to be??

Well, guess what. I finally tried making homemade ones. And they are AMAZING. And easy!! And you can now have hot, buttery, homemade soft pretzels whenever on earth you please! You're welcome.

Old-Fashioned Pull-Apart Rolls

Three days until school starts!! It finally feels like it is almost here for real, because we went school shopping yesterday! Bought bushels of school supplies, a few school clothes for Joe, school shoes for both boys (and me, I couldn't resist!!) then searched around for the school supplies Walmart was out of (#2 pencils?? Seriously??) Still can't find 2 red correcting pencils, I think I'll have to go to an actual office supplies store for those. Grr. Joe is so excited he can't contain himself, he keeps carrying his new pencil case around. It's empty, but it doesn't matter. I'm also learning that my boys have two very distinct styles. Stephen loves color. The more colors he can cram into his clothes, the better! Brighter is better too. Brown and grey are unacceptable, especially grey. Joe, on the other hand, would have an entire wardrobe of black and green if I let him. He goes for simpler clothes, and may I say, has a pretty cool sense of style already. He looks so grown up in his school clothes!! He's also getting awfully long feet... it's looking more and more like he's going to be tall!! I would love to have two six-foot-tall boys... with lots of six-foot-tall friends to feed... Fingers crossed!

Lemon Rosemary Gruyere Artisan Bread

I finally made it!! Only a day late this week :) That's okay, I'll cheat and schedule it for yesterday. I'm tricky like that! Sweet Cream & Chocolate Marble Loaf

It's that time of year again, folks! The Anne of Green Gables marathon has begun. For those of you tuning in lately, Anne of Green Gables is my second favorite book of all time, a very very close second to Jane Eyre. As a series, it's absolutely my favorite. And I usually read it all the way through once, sometimes twice a year. I'll finish a book, and for some reason, I just need some Green Gables time. And I love her so much that I have to then finish the whole series. 

As I started it last night, and got through the scene where they tell Anne she can't stay because she's not a boy, "lightning struck my brain." 

Anne is an orphan.

Most of you are thinking, "Well, yeah, and?" But sometime in the next few months, I'm about to adopt a little girl. And she will be exactly Anne's age. 

If you've ever had a book make itself at home in your heart and soul, you might have an inkling of what this means for me. Growing up, I wanted to be Anne. She was a core influence in my love of the fanciful, mystical, and joyous. The little wonderful things all around us. I know, I know, she's not real, and life isn't that perfect. But the thought that I could give a little girl like Anne a home, and help her bloom, and become herself, and heal her lonely little heart... Honestly, I don't really have the words to describe how incredible that is. 

Sorry for getting all deep on you two whole days in a row! I'm an emotional rollercoaster. :) Besides, seeing as how I have no experience with either adolescents, girls (besides being one), adoption, etc, I'm pretty sure I'll be sharing more and more of that journey with you, and asking for help and input, so might as well start now! After all, what are blogging friends for?? Because I firmly believe we are for more than just making each other feel good about our recipes and pretty pictures. :)


Sweet Cream & Chocolate Marble Loaf (adapted from Pinch of Yum)
Printable Recipe

1 ¼ cup flour
¼ tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup sugar
1 tsp vanilla
½ can sweetened condensed milk
⅓ cup milk (I actually used half milk, and half heavy cream)
1 beaten egg
⅓ cup melted butter, slightly cooled
1 1/2 Tb cocoa powder
1/2 cup chocolate chips

Preheat oven to 325. Grease and/or line a loaf pan with nonstick spray/ parchment paper.

Sift the flour, baking soda, baking powder, salt, and sugar together in a medium bowl. Add the vanilla, sweetened condensed milk, milk, egg, and melted butter. Stir until just combined.
Pour the batter into the prepared loaf pan, reserving about ½ cup of the batter. Whisk cocoa powder into the remaining ½ cup batter. Pour the chocolate batter over the regular batter and marble with the tip of a knife, making “s” motions throughout the batter until the two batters are swirled together in a nice pattern. Tap a few times on your counter (or table) to release any air bubbles, and sprinkle with chocolate chips.
Bake for 35-45 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Let cool in the pan for 10 minutes before removing.
All right, so I didn't do the greatest job of swirling... But it still turned out yummy! I also flattened the top a bit... I decided to add chocolate chips when I started, then forgot as I put it in the oven... so when I yanked it back out 6 minutes later and sprinkled them on, well, it flattened. That's okay, they were necessary!
I've never baked anything with sweetened condensed milk, so I wasn't sure what it would be like, but it was yummy! Creamy, sweet, and vanilla-y, with plenty of chocolate flavor in the swirl (or puddle, in my case!) Not rich and decadent, but definitely chocolate.
The bread is soft and delicious. This is a perfect after-school-snack kinda bread. Not super duper sweet, but special. And of course, topped with chocolate chips!

Biscoff Crunch Banana Bread

I am SUCH a silly girl! I was so proud of myself for getting all the utilities changed over to our new apartment, switched cable and internet providers to save us money and wasted channels, then set them up to start on Monday. Whoops!! I forgot our current services aren't just going to follow us over to the next building. :) So, since I won't have internet over the weekend, I'm setting up my next few posts tonight, in a marathon blog-writing event! We're going to watch/listen to the last few episodes of American Idol too. I'm losing all of my saved shows, after all! Must keep caught up! Although I have to say, this season is seriously lacking in unique, original talent. Not like the last two seasons. And from the judges' comments, it's pretty obvious what they're looking for, and it's NOT another Phillip Phillips. They are on the prowl for a Pop Star. "The whole package." Oh well, there are a few people who are definitely worth watching, and cheering!!

Enough about American Idol. Sorry for the tangent. I'm so excited about this recipe. I told my Mom it was the BEST banana bread EVER, and she laughed at me. She said, "Well, you've made so many banana bread recipes that its pretty impressive if something tops the old ones!" (or something like that, sorry Mom) And she's right. This is awfully impressive. And it's going to take a lot to top it.

The Geologist is popping popcorn... I miss popcorn...


Biscoff Crunch Banana Bread (adapted slightly from Table for Two)
Printable Recipe

3 over-ripe bananas, mashed
1/3 cup plain Greek yogurt
1/2 cup Biscoff spread (you can use crunchy or smooth, I used crunchy and LOVED it!!)
3 Tb melted butter
2 eggs, beaten
1/2 cup granulated sugar
1 3/4 cup all purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
12-18 Biscoff cookies, broken into chunks

Preheat oven to 350 degrees. Grease/line a loaf pan and set aside.
In the bowl of a stand mixer or a large bowl, combine bananas, yogurt, Biscoff spread, melted butter, and eggs, and mix until well blended. (Yes, I know, my eggs aren't beaten. Which is why I'm telling you to beat yours first, it's easier.)
In a separate bowl, whisk together the sugar, flour, baking soda, salt, and cinnamon. Slowly add to the liquid ingredients, beating until batter is mixed well. Gently fold in 3/4 of the cookie pieces with a spatula. Pour the batter into the prepared loaf pan, use a spatula to smooth the top, and sprinkle with the remaining cookie pieces.

Bake for 1 hour or until toothpick inserted in the middle comes out clean, or with moist crumbs. Let cool completely before removing from pan and slicing.
I had 13 pictures of this bread after I was done editing... And I didn't want to get rid of a single one... isn't it fun how you can see bits of the letters on the cookies? I don't know why that detail makes me smile, but it does. 
I know I promised that I wouldn't always give you a zillion pictures now that I have a new camera, but it turns out that snowy days, just the right kind of snowy days, can give you killer light!!
I love to leave my bananas a little lumpy, it's so delicious to get a pocket of warm, gooey banana in there...
See the dark spots? Those are the cookie chunks, they disintegrate into soft little chunks of Biscoff deliciousness. They don't stay crunchy, but it doesn't matter. Really.
The toasty, brown sugar-with-a-hint-of-cinnamon flavor of those Biscoff cookies is a perfect pair with bananas! I never would have thought it, but it reminds me of the cinnamon sugar bananas I used to get at a Brazilian grill in Utah. 
Fantastic. Track down these cookies and make this, you may never make banana bread without them again! I won't. At least for a while... :)

Chicken Gyros & Homemade Soft Pita Bread

Is anyone else as excited for this recipe as I am?? I was supposed to make it last week, until it became apparent I wouldn't be eating solid food anytime soon. So I put it off, and put it off... and today I stuffed those tooth-holes full of gauze and just went for it.

I absolutely love Gyros, but I gave up re-creating them at home a long time ago. If Cooks Illustrated can't get it right, it's just not possible, people! Unless I buy a vertical spit and have some Greek guy teach me how to make them... and where to find good lamb... unlikely. So I started seeing lots of chicken gyro recipes around Pinterest, (which got me excited, because I am a chicken girl!!) but none of them looked right. Hard to describe what that means, but there it is! Until I saw this one, and alarm bells went off it my head. Could it be?? It looked perfect!! Saucy... well-seasoned... homemade tzatziki... looks good... wait a second. She made her own pita bread?! We have a winner, folks!! Thank you, Tieghan at Half-Baked Harvest!!


Chicken Gyros (adapted from Half-Baked Harvest)
Printable Recipe

Chicken:
4 cloves garlic, smashed
juice of 1 lemon
3 tsp red wine or balsamic vinegar
3 Tb extra virgin olive oil
3 Tb plain Greek yogurt (I used 2 %)
1 tsp dried oregano
1/2 tsp dried dill
Salt and pepper
1 1/2-2 pounds boneless chicken, trimmed cut into thick strips/chunks (we had 2-3 pieces per chicken breast)

Tzatziki Sauce:
16 ounces plain greek yogurt (I used the rest of that 2%)
1/2 English cucumber or 1 regular cucumber, peeled and seeded and diced small
2-3 cloves garlic, pressed (or finely minced)
1 Tb white wine vinegar
1 tsp, dried dill
1 tsp dried oregano
half a fresh lemon, juiced
1 Tb extra virgin olive oil

To Serve:
Homemade Pita Bread (recipe below)
tomatoes
feta cheese
mixed greens (or lettuce)
thinly sliced red onions, marinated in a few Tb balsamic vinegar and a pinch of sugar
olives (the original recipe has an olive tapenade recipe, if you like olives!)

Chicken first! Combine the garlic, lemon juice, red wine vinegar, olive oil, Greek yogurt, oregano, dill, and salt and pepper to taste in a medium bowl. (I estimated about 3/4-1 tsp of salt) Whisk together until smooth. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour or overnight. (Or you can combine it all in a ziplock bag)

Next, the Tzatziki! First, pour any liquid off the surface of the Greek yogurt. (Full fat or 2% work best, nonfat is a bit thin) Combine the cucumbers, lemon juice, and a pinch of salt. Toss to combine, then put them in a wire mesh strainer over a small bowl. Let sit in the fridge for about 30 minutes. This helps get rid of extra water in the cucumbers that can make your sauce watery. Mix together the yogurt, marinated and drained cucumber, garlic, white wine vinegar, dill, oregano, olive oil, salt and pepper to taste, and another drizzle of lemon juice. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

When you're ready to cook, preheat your broiler. Line a large rimmed baking pan with foil. Remove the chicken from the marinade, reserving the marinade. Place the chicken on the baking pan and broil the chicken for 10 minutes until cooked through.
Let the chicken rest about 5-8 minutes, then slice up into smaller pieces. Pour the remaining marinade in a medium size skillet and bring to a boil. Simmer for a few minutes and then toss the cooked chicken with the sauce.
Heat pitas (in pan or microwave). Top with chicken, tzatziki sauce, feta cheese, and your favorite veggies. Serve immediately.
Homemade Soft Pita Bread (also from Half-Baked Harvest)

1 cup pretty warm water
2 tsp active dry or instant yeast
2 1/2 - 3 cups all-purpose flour
2 tsp salt
1 Tb extra virgin olive oil

Combine the water and yeast together in the bowl of a stand mixer or large bowl. Let sit for about five minutes until the yeast is dissolved. Add 2 1/2 cups of the flour (saving the last half cup for kneading), salt, and olive oil. If using a stand mixer attach the dough hook and knead the dough on medium speed for 8 minutes, adding more flour if needed until you have a smooth dough. (I didn't need any more) If kneading by hand, sprinkle a little of the extra flour onto your clean work surface and turn out the dough. Knead the dough for about 5-7 minutes, until the dough is smooth and elastic. Add more flour as needed to keep the dough from sticking to your hands or the work surface, but try to be sparing. It's better to use too little flour than too much.

Clean the bowl you used to mix the dough and drizzle it with a little olive oil. Set the dough in the bowl and turn it until it's coated with oil. Cover with a clean dishcloth or plastic wrap and let the dough rise until doubled, about 1 hour. *At this point, you can refrigerate the pita dough until it is needed. You can also bake one or two pitas at a time, saving the rest of the dough in the fridge. The dough will keep refrigerated for about a week.*

When you're ready to bake, gently deflate the dough and turn it out onto a lightly floured work surface.
Divide the dough into 6-8 equal pieces and gently flatten each piece into a thick disk. (I did 8, and my pitas were a bit thin. If you like them thicker, divide into 6 pieces) One at a time, roll each piece into a circle(ish) shape 8-9 inches wide and about a quarter inch thick.
Sprinkle with a little extra flour if it starting to stick. If the dough starts to spring back, set it aside to rest for a few minutes, then continue rolling. Repeat with the other pieces of dough. (Once you get the hang of it you can be cooking one pita while rolling the next one out.)

Warm a cast iron skillet over medium-high heat (you want a hot pan). Drizzle a little oil in the pan and wipe off the excess. Lay a rolled-out pita on the skillet and bake for 30 seconds, until you see big bubbles starting to form.
Flip and cook for 1-2 minutes on the other side, until large toasted spots appear on the underside. Flip again and cook another 1-2 minutes to toast the other side. The pita should start to puff up during this time; if it doesn't or if only small pockets form, try pressing the surface of the pita gently with a clean towel.
Keep cooked pitas covered with a clean dishtowel while cooking any remaining pitas. These are best eaten fresh, but will keep in a ziplock bag for a few days or in the freezer.
This pita bread is fabulous!! Soft, chewy, and fluffy, with great flavor, and really not tons of work! I won't be buying it from the store nearly as often anymore, these are sooo much yummier. (as long as I have time to plan ahead!)
Ah, the perfect chicken gyro. We used a package of mixed spring greens, we like the extra flavor they have. Sometimes when you use lettuce it just kinda tastes like water, you know?
Of course, I like mine packed with veggies, tomatoes and onions and greens...
Creamy cool tzatziki, crumbly cheese, all mixing together with the sauces from the chicken...
Honestly?? Heaven in a pita. Easily as good as the best authentic gyro I've ever had. A new favorite!!
