Seriously! Who knows why these things happen. I did not have that experience when I baked the marmalade cake as you know . . . I wonder if it is the difference between British flour and American flour??? Hmmm . . . or altitude? You are in a high altitude area aren't you? Maybe you need to compensate a bit for that?
